Hitchin is a North Hertfordshire market town, dating back over 1000 years, flourishing due to the wool trade in the 18th century. The industrial revolution saw change and the arrival of the Great Northern Railway brought a new way of life with more opportunities for local farmers. The Corn Exchange in the square was built in response to increased grain trading but now the barley there is solely in the drinks served!
